Zucchini and beetroot salad for the winter

A delicious vitamin salad for the winter is a salad of courgettes and beets. Such a light and juicy salad, which contains a very small amount of oil, is perfect for any meat dish as a side dish, and also serves as an alternative to fresh salad in the winter season.

For the preparation of the salad, we chose young zucchini with soft skin, which we will not peel off and young beets. We wash the zucchini and remove the stalk. We wash the beets, peel them. Peel the onions and soak them in cold water for 10 minutes so that they do not irritate the eyes when slicing.

We rub the zucchini on a coarse grater, ideally on a grater for Korean carrots.

We also rub the peeled beets on a coarse grater.

Remove the onions from cold water and chop them into thin slices.

We put a deep saucepan or frying pan on the stove, pour vegetable oil and put vegetables in it (if you want the salad to be more fatty, add more vegetable oil than indicated in the recipe.) We will not squeeze juice from beets and zucchini, so we do not add a lot of vegetable oil, vegetables will let juice and the salad will be juicy enough.

Add granulated sugar, salt to the vegetables, mix all the ingredients well.

Bring vegetables to a boil over medium heat, reduce heat and simmer covered for about 40 minutes.

Next, add vinegar and ground black pepper to the salad, mix the salad well again, simmer for another 5-7 minutes and remove it from the heat.

We wash the salad jars with baking soda, rinse with water and sterilize over steam for 3-4 minutes. After that we put the hot salad in the jars, screw it with boiled lids and leave it at room temperature until it cools completely. Then we put the jars of salad in a cool dark place for storage.
