Vegetable salads for the winter will ideally complement both a dinner and a festive table. The addition of zucchini will make the appetizer even more satisfying and appetizing.

Rinse the zucchini thoroughly. We do not remove the peel from young and medium-sized fruits. Cut vegetables into small cubes.

Pour vegetable oil into a large saucepan or cauldron. First, lay out the onion and simmer for 5 minutes. Add carrots to the onion and continue to simmer the same amount. Then we spread the zucchini, cook for another 10 minutes. Now we lay out all the other ingredients: tomatoes, black peppercorns, bay leaves, salt, sugar and vinegar. Stir, cover and simmer over low heat for 1 hour.
