Spicy zucchini salad

Delicious zucchini and hot pepper salad! I highly recommend preparing more for the winter. Vegetables retain their beneficial properties and together create an incredibly mouth-watering combination. Such a salad will perfectly complement the main course and is perfect for both lunch and a light dinner.

We wash all vegetables and peel them of petioles, husks and seeds. Cut the zucchini into small pieces up to 1.5 cm.

Now grind the peppers and tomatoes into a homogeneous puree using a meat grinder. We pass the garlic cloves through a press. We send the finished mixture to the zucchini.

Season the salad with vegetable oil, salt and sugars. Stir and put on fire. Bring the salad to a boil, reduce the heat and simmer for 30 minutes.

When 15 minutes remain until readiness. pour in vinegar and stir. We put the salad in sterilized jars and roll it up tightly.
