We wash the zucchini, peel and remove the seeds. Cut into small cubes.

Free the sweet bell pepper from the core and the stalk, then finely chop.

Immerse tomatoes with vegetable oil, salt and sugar in a large saucepan. Stir, bring to a boil, then add zucchini and peppers. We continue to simmer for 20 minutes. Now add the chopped garlic. Mix again and continue cooking for 5-7 minutes. Pour in vinegar a couple of minutes before cooking.
