Zucchini salad with tomato paste for the winter

Zucchini for salad is best cut into small slices, rather than grated. Then you can feel their taste and consistency of semi-cooked vegetables. Tomato paste gives the salad a pleasant color and adds tomato sourness.

Wash the zucchini, remove the tails. If the fruit is overripe, remove the pulp with seeds and the skin.
