Kuban cabbage salad for the winter

Kuban salad with cabbage, pepper, tomato and cucumbers retains the wonderful aromas of freshly cut salad, so housewives often tend to roll up more cans of such a snack for the winter. The pungency of the salad should be adjusted by adding hot pepper.

Wash and peel vegetables.

Chop the cabbage into thin strips. Add some of the salt, mix, knead with your hands until the juice begins to stand out. Cut the cucumbers and tomatoes into slices, cut the onion into half rings. Cut the carrots and bell peppers into strips, cut the hot peppers into rings.

Mix all vegetables together in a deep saucepan, add sugar, the rest of the salt. Pour in odorless vegetable oil, a third of the vinegar, put peppercorns and bay leaves. Leave the salad for 1 hour, then set the pan on fire. Bring to a boil, covered with a lid. Cook for 8 minutes. over low heat, pour in the remaining vinegar. Stir gently so the vegetables don't turn into porridge.

Arrange the salad in sterilized glass jars, roll up with sterilized lids. Turn cans over and wrap in warm cloth. Wait for it to cool completely for about 1 day, then transfer the seaming to a cool place for storage in the dark.
