Chinese marinated zucchini salad

Marinated zucchini is a great option for a fresh salad, dressed with a marinade of honey, soy sauce and fresh herbs. Soy sauce adds sourness to the salad, garlic adds zest, and honey adds sweetness and amazing aroma. We wash young zucchini with soft peel under running water, put it on a kitchen towel and let it dry a little. Then we remove the stalks.

Cut the zucchini in half lengthwise, then in half again and use a vegetable peeler to cut them into thin slices along the entire length of the zucchini. Add salt, mix gently with your hands and leave for 25-30 minutes to let the juice stand out from the zucchini.
