I bring to your attention a delicious salad of unripe tomatoes for the winter. Green tomatoes are not eaten raw but are harvested mainly due to circumstances such as early frosts. So that the harvest does not disappear, they prepare various goodies for the winter.

Wash green tomatoes thoroughly and let them dry.

Tear off the tails and cut the stems.

Cut the prepared tomatoes into 1 centimeter thick slices.

Peel the onions and garlic, cut the peeled onions into feathers or whatever is more convenient for you. Cut the peeled garlic into thin slices.

Rinse carrots and horseradish root and peel with a vegetable peeler. Cut the peeled vegetables into slices.

Prepare the marinade. Pour the required amount of drinking water into a deep metal dish with a thick bottom, add granulated sugar, table salt and table vinegar. Bring to a boil. Place chopped tomatoes, onions, garlic, carrots, horseradish root and spices.

Bring to a boil and simmer for about 15-20 minutes over medium heat. In the meantime, prepare the jars, wash them thoroughly and sterilize them in the microwave or oven. Pour boiling water over the lids or boil in a saucepan. Jars and lids must be completely dry.

Rinse the parsley thoroughly, dry and chop finely. Then add to the rest of the ingredients, stir and remove from heat.

Place the dill umbrellas and bay leaves in sterile jars, and then use a large spoon to carefully spread the hot salad over the sterile jars.

Cover the jars with sterile lids and place in a saucepan, the bottom of which is covered with a kitchen towel, pour warm water over the hangers of the jars. Put on fire. Bring to a boil and sterilize for about 15 minutes over moderate heat.

Gently remove hot cans with snacks from the pan and screw with sterile lids. Turn the jars upside down, wrap them in a warm blanket and leave to cool completely. After cooling completely, turn the salad jars over and transfer them to a cool, dark place for storage.
