I want to share a recipe for a wonderful winter tomato and carrot salad. For the preparation of a fragrant salad, ripe and juicy vegetables rich in useful vitamins are used. The appetizer turns out to be very tasty with a balanced combination of ingredients.

Prepare all the ingredients you need for a delicious winter salad. Wash the tomatoes thoroughly, dry them, remove the stalk and cut into small cubes.

Place the chopped tomatoes in a thick-bottomed container. Place over medium heat and bring to a boil. Wash the carrots and peel them with a vegetable peeler. Then cut into strips or grate on a coarse grater. Peel the onions, rinse and cut into half rings. Wash the bell pepper and peel it from seeds and core, cut into half rings.

Put chopped onions, bell peppers and carrots in a container for tomatoes. Mix thoroughly and simmer the vegetable mass for about 30 minutes over moderate heat.

Wash and sterilize the jars well in the oven or microwave. Pour boiling water over the lids or boil in a saucepan. 5 minutes before the salad is ready, add the required amount of granulated sugar, table salt, vegetable oil. Then pour in the vinegar essence, mix thoroughly and remove from heat.
