Tomato and cucumber salad for the winter in its own juice

Tomato and cucumber salad is one of the most favorite salads of our family. It perfectly combines juicy cucumbers and tomatoes, onions and bell peppers, which, in the process of sterilizing the salad in jars, emit a lot of juice, in which they are then pickled. Vinegar and vegetable oil make an excellent salad dressing, and a pinch of ground coriander gives the salad a unique flavor.

We wash the pepper under running water, put it on a towel and let it dry a little. Then we cut it into medium-sized rings.

We wash the tomatoes, put them on a kitchen towel and let them dry a little. Then we cut them into rings.

Peel the onions, rinse and soak for 10-15 minutes in cold water so that it does not irritate the eyes when cutting. Then we shred it with thin rings.

We wash the cucumbers and peel them if desired.

Put vegetables in sterilized jars in layers: the first layer is a few rings of onions, then cucumbers, the next layer is pepper and on top are tomatoes. Add salt, sugar and vegetable oil to each jar.

Cover the jars with boiled lids on top. We put the jars of salad in a large saucepan with a cotton towel at the bottom, pour the water so that it reaches the shoulders of the jars, and put the pan on the fire. Bring the water to a boil over medium heat, reduce the heat and leave the salad to sterilize in boiling water for 25-30 minutes.

5 minutes before the end of sterilization, add vinegar to each jar, sterilize and use a stick to get them out of the water. Close the jars of hot salad tightly with lids, turn them upside down and leave to cool completely at room temperature. Then we put the salad in a cool dark place for storage.
