Universal rolling of beets with beans will help save time on cooking borscht in winter if the household unexpectedly returned home and the refrigerator is empty. To do this, you need to prepare a salad of boiled beans and beets from the summer, roll it up and cool it correctly so that the jars are preserved for the whole winter.

Soak the beans in cold water for one day, drain the water several times and pour in a new one. Boil the beans the next day until tender.

Wash the beets thoroughly with a brush and cook in the peel until tender.

Pour cold water over the beets and cool. Then remove the skin, rub on a coarse grater. Peel, wash and grate raw carrots. Peel the onion and cut into thin half rings.

Wash the tomatoes, cut out the white part and chop coarsely together with the skin. Saute the onions and carrots in a frying pan in vegetable oil, then transfer them to a separate container and simmer the tomatoes in this oil.

Put all vegetables and beans in a wide cauldron, pour in half a liter of vegetable oil, boiled water, vinegar. Add salt and granulated sugar. Mix everything, set on medium heat and bring to a boil. After boiling, reduce the heat a little, simmer the salad for half an hour, stirring from time to time. Arrange in sterilized glass jars, roll up. Turn the cans over and listen for air coming out of them. Cover with a warm blanket and allow to come to room temperature. Store in a basement or closet.
