Beetroot and carrot salad for the winter

Beetroot and carrot salad is easy to prepare. It is suitable as a dressing for borscht in the winter season. Hot peppers are optional, you don't have to add it.

Prepare the ingredients of the salad. Wash vegetables and peel those that are necessary.

Cut the carrots into slices, large specimens are allowed to be grated. Cut the onion into half rings. Rub the beets coarsely on a grater, finely chop the washed parsley.

Pour vegetable oil into a deep cauldron, add onion and fry until transparent for about 5 minutes.

Put carrots to the onion, fry for another 5 minutes.

Add chopped beets to carrots and onions, stir.

Tomato paste can be replaced with 500 ml ketchup. Dilute the paste by adding 500 ml. water and stirring.

Pour tomato paste into the cauldron, add salt, granulated sugar and vinegar. Mix thoroughly and cover the cauldron with a lid. Simmer for 50 minutes, stirring occasionally.

Pass the garlic through a press.

Finely chop a pod of hot pepper.

Add pepper and garlic to the cauldron to the vegetables, stir and simmer for another 20 minutes.

Put chopped parsley in a cauldron with vegetables.

Wash glass jars and lids with soda, rinse. Sterilize the jars, and dip the lids in boiling water for 4 minutes.

Arrange the salad in the prepared container and roll up or tighten the lids for the winter. Turn the blanks upside down, spread a warm blanket on top. When the salad is completely cool, the rolls can be moved to the basement, where they will be stored in the fall and throughout the winter.
