Beets are a healthy product. They eat raw and prepared beets. Even young beet leaves are used to prepare soups and salads. I want to offer a recipe for a vitamin salad from beets for the winter without sterilization. The salad can be used both as an appetizer and as a dressing for borscht.

Prepare all the food you need for your winter salad. Wash and peel vegetables. Grate the peeled beets and carrots on a coarse grater or with a Korean carrot grater. Finely chop the onion. Cut the bell peppers into thin slices. Chop the tomatoes with a blender.

Pour chopped tomatoes into a deep enamel bowl, add oil, salt and granulated sugar. Place over medium heat and bring to a boil.

Put finely chopped onion, grated beets and carrots, chopped peppers in the tomato sauce and simmer for about one hour, reducing heat and stirring occasionally. Put peeled garlic and hot pepper in a blender bowl, chop. Place in salad. Add vinegar. Stir gently. Simmer for another 15 minutes.

Wash the jars well in advance and heat them in the microwave. Put the prepared salad in clean jars and close with sterile lids.
