Beets are a healthy vegetable that is often found on our table in salads and soups. We can talk about its usefulness for a very long time: it contains vitamins, soluble fiber, due to which it normalizes the digestive tract. Beetroot dishes are a great way to diversify your menu without harming your figure. Today we will prepare a salad with beets, which is wonderful in itself, and also perfect as a side dish for meat dishes.

We wash the beets, cut off the tails and put them in foil. Wrap tightly and bake in the oven for 1.5 hours. Then we take out, let the beets cool, peel and cut them into small cubes.

Peel the onion, rinse and cut into small cubes. Put the onion in a preheated pan with vegetable oil and fry until golden brown.

We wash the zucchini, if you have young zucchini and their peel is soft - there is no need to cut it off. If the peel is hard, peel the zucchini from the peel and seeds. Cut the zucchini into small cubes and place in a saucepan along with the onions.

Put the beets on top, mix well, bring the contents to a boil over low heat. The zucchini will let the juice out, and our vegetables will not burn. Close the pan and leave the vegetables to simmer for 30 minutes. Then add salt, sugar and vegetable oil. Boil for a couple of minutes and add vinegar. Mix everything well, cook for another minute and remove from heat.
