Beetroot salad with prunes

Beetroot salad with prunes is a classic combination of products that is actively used in Slavic cuisine. Such a salad is very useful and will never be superfluous on the festive table. Raisins add juicy sweetness, and walnut pieces add flavor.

Beets for salad must be thoroughly rinsed with a brush. You should not immediately peel the beets, as without the peel, the root crop will become dull after heat treatment. In addition, most of the vitamins will be lost.

To cook beets, you can boil them, or you can bake them. In the case of boiling, dip the prepared roots in boiling water and cook at a boil of medium intensity for one and a half to two hours until tender.

In the case of baking, washed and dried beets should be lightly greased with vegetable oil and wrapped in foil with the shiny side inward. Put the wrapped beets on a baking sheet and bake in the oven at 200 degrees for one hour.

Let the finished beets cool completely and remove the skin with a knife.

Thoroughly rinse the prunes with hot water and pour boiling water over them. We soak for half an hour so that the prunes soften well.

We sort out the raisins from possible impurities, rinse with hot water and also pour boiling water. We stand for ten minutes and filter from the liquid.

We squeeze the softened prunes from excess liquid and cut them into small pieces. Put the raisins and chopped prunes in a salad bowl.

Dry the walnuts in a dry frying pan for five minutes, until a characteristic nutty aroma appears. Let the nuts cool and chop with a knife in large pieces.

The cooled beets are grated with large holes or cut into thin strips. Put the beets in a salad bowl with prunes and raisins. Sprinkle with walnuts, add mayonnaise and mix gently. If you wish, you can additionally add salt and pepper to the prepared salad. It is recommended to serve immediately after preparation.
