Beetroot salad with fried onions

A wonderful salad of boiled beets and fried onions will help improve digestion. It does not contain mayonnaise, the dressing consists of quality olive oil and soy sauce. In addition to the main ingredients, walnuts and feta cheese are also included.

Rinse the beets well, put in a saucepan, cover with cold water. After boiling, simmer for about 1 hour. After that, turn on cold water, drain the boiling water from the pot with beets, pour cold water over the vegetables and leave to cool. Peel the beets.

Grate the beets on a coarse grater or vegetable cutter, put in a deep bowl or salad bowl.

Peel and cut onions into thin rings. Heat butter in a large skillet with high sides, add 3 tbsp. l. odorless vegetable oil. Put onion rings in heated oil, salt.
