Some people like whole pickled vegetables, while others like vegetable salads. Tomatoes are great for both. You will get a delicious salad from green tomatoes, which will retain all the benefits and taste of fresh vegetables.

Wash the vegetables under running water, cut off the tails and tops. Cut the stalk of tomatoes, peel the peppers from seeds, remove the husk from the onion, peel the carrots.

Cut the tomatoes into thin slices, chop the pepper into strips. Grate the carrots on a coarse grater, cut the onion into thin half rings.

Mix the chopped vegetables in one large bowl, add sugar, salt, sunflower oil and vinegar, mix well. Leave the salad for 30-40 minutes for the vegetables to start juicing.

Wash and sterilize salad jars well. Boil the lids. Divide the salad into jars and pour in the juice that has separated. Cover the jars with lids, put them in a large saucepan, pour in the water. To prevent the jars from bursting during heating, place a towel on the bottom of the pan. Put the saucepan on the fire and sterilize the salad jars in boiling water for 10 minutes. Then screw the lids tightly on and allow them to cool at room temperature. Store the green tomato salad in a cool, dark place.
