Green tomato salad with carrots for the winter

Salad rolls are a great way to preserve your vegetable harvest for the winter. And at the end of the season, when there are some unripe green tomatoes left, and they can be used. We suggest you use this simple recipe and prepare a salad of green tomatoes, carrots and onions, it can serve not only as an appetizer, but also as a basis for soups.

Wash the green tomatoes, dry them, cut out the place where the stalk is attached and cut the vegetables into large cubes.

Peel the onion and chop finely.

Peel the carrots, wash and grate on a coarse grater.

Preheat a frying pan, pour in some sunflower oil. Fry the onions until translucent, then add the carrots to the pan, simmer the vegetables together for 15-20 minutes.

Then add tomatoes to the pan, simmer for 15-20 minutes, stirring occasionally.

At the end of cooking, add salt and spices to taste. Then pour in the vinegar, stir and turn off the stove. Spread the salad in sterilized jars, roll them up, cover the jars with a warm blanket and leave to cool completely.
