To diversify the winter menu, I advise you to prepare a salad of green tomatoes for the winter. For many, they do not have time to ripen in the fall and simply deteriorate. But such green tomatoes turn out to be very tasty and even a little sweetish if rolled up for the winter without vinegar in the form of a salad.

Wash the tomatoes, cut into large slices. Cut the peeled onion into quarters, peel the carrots, wash and rub coarsely on a grater.

Pour vegetable oil into the saucepan where the salad will be cooked. Set the heat to medium. Put onions and carrots in a saucepan, sauté for 5 minutes.

Then put the tomatoes in slices, add granulated sugar, salt, put peppercorns. Stir and simmer the salad after boiling for another 1 hour, stirring from time to time.

Arrange the green tomato salad in sterile jars and roll up with clean lids. Allow to cool upside down under a warm old sweater and store in a cool dark place.
