Green tomato salad for the winter without vinegar

I highly recommend preparing a delicious and rather aromatic green tomato salad for the winter without vinegar. Citric acid is used as a preservative in this recipe. The salad is prepared from available ingredients and does not take much time to prepare.

Ingredients

Cooking process

step 1 out of 6
Prepare the ingredients for your green tomato salad without vinegar. Rinse green tomatoes, bell peppers and carrots thoroughly under cold running water. Peel the carrots with a vegetable peeler, peel the onions.
step 2 out of 6
Peel the bell pepper from seeds and core, cut into half rings. Cut the tomatoes into slices 1-1.5 centimeters thick, removing the stalk. Cut the onions into half rings. Grate the peeled carrots on a coarse or Korean carrot grater.
step 3 out of 6
Prepare a deep container with a thick bottom in which to cook the salad. Fold up the grated carrots, chopped green tomatoes, bell peppers, and onions. Pour in granulated sugar, citric acid, table salt and pour in the required amount of vegetable oil. Mix thoroughly.
step 4 out of 6
Put the container with vegetables on low heat, bring to a boil, and then cook for 15-20 minutes, stirring occasionally. Wash and sterilize the jars in the microwave or oven. Boil the lids in a saucepan for about 7-10 minutes.
step 5 out of 6
Fill sterile jars with hot green tomato salad.
step 6 out of 6
Screw it with sterile lids, turn it upside down, wrap it in a warm blanket and leave it in this state until it cools completely for about a day. Then move the jars to a cool, dark place for storage.

Bon Appetit!
