The salad of green tomatoes, the recipe of which is presented to your attention, will be a great both everyday and festive appetizer, since this dish is ideally combined with kebabs, mashed potatoes, and any other meat dishes and side dishes. Green tomato salad turns out to be light and tender, and thanks to its bright colors, it is very popular with housewives.

First of all, the tomatoes must be thoroughly rinsed, the stalks removed from them, and then cut into slices.

The onions must be peeled and cut into either half rings or quarters.

The next step is to wash and peel the carrots, and then grate them.

Then we take a large container and mix the chopped tomatoes, carrots and onions in it. Salt everything. The resulting mass must be covered and left in a cool place for 10 hours. Stir the vegetables during this time to distribute the brine evenly.

In a separate saucepan, combine vegetable oil, vinegar and sugar, mix everything, then send it to the fire and after boiling, cook for three minutes. Next, pour the contents of the pan into a container with chopped vegetables. Cook the resulting mass over low heat for half an hour.

We spread the vegetable mixture in sterilized jars to the very top and roll up the lids. Then we turn the blanks upside down and wrap them in a thick blanket until the contents of the cans cool completely.
