When the main harvest has been harvested and there are still unripe tomatoes left, do not rush to throw it away. This delicious vegetable salad can be used as an appetizer or dressing in soup and it is not difficult to prepare it without sterilization.

Rinse the tomatoes well, dry and cut into medium cubes.

Peel the onion and chop it into cubes.

Peel and grate the carrots coarsely.

Preheat a skillet, add oil and put onions, fry until blush and add carrots. Simmer vegetables over low heat for 15 minutes, stirring occasionally.

Place the tomatoes in the skillet and cook for another 15 minutes, stirring occasionally. Season vegetables with salt and spices and simmer for another 5 minutes. At the very end of cooking, pour in the vinegar and stir.

Spread the hot salad into sterile jars, roll and turn upside down. Cover the seam with a towel overnight. In the morning, transfer to a cool, dark place for storage until winter.
