Many are familiar with such preparation for the winter as fried eggplant. However, not everyone knows that you can also harvest zucchini. With minimal effort and a simple set of products, you get a delicious preparation that will delight you on long winter evenings.

The amount of salt, vinegar and vegetable oil in the recipe is given for one liter jar. Select for harvesting young zucchini that will not exceed the diameter of the used jar in diameter. If the skin is thick, it is best to cut it off, but you can cook it this way. Wash the zucchini, dry and cut into 1 cm thick slices.

Fry the zucchini in vegetable oil on both sides until golden brown. Cut the peeled garlic into small pieces. Cut or tear the washed and dried greens into pieces with your hands. Wash the jars with soda and rinse. Pour a layer of vegetable oil on the bottom, put about 2 tsp. garlic in each jar. Then add some of the dill and parsley. Pour salt on the greens.
