Fried zucchini salad with mayonnaise

Once I made a salad from what was in the fridge. Now the salad of fried zucchini with mayonnaise is one of the favorites in our family. It cooks quickly and has an incredible taste and aroma.

Prepare all the ingredients you need for the mayonnaise zucchini salad. Choose young squash with soft skin. Wash the squash thoroughly, pat dry and cut into 7mm thick slices. Place in a deep bowl, season with salt and leave for about 10 minutes.

Drain the resulting liquid from the zucchini, cut the circles in half, blot with paper towels. Heat the pan well, pour in a small amount of vegetable oil, fry the zucchini on both sides until golden brown. Then place them on a paper towel to absorb the excess oil. Transfer the zucchini to a container.

Wash the tomatoes thoroughly, remove the stalk and chop randomly. Boil chicken eggs in salted water, cool completely and peel. Cut into half rings and place in a container with zucchini.

Rinse parsley and green onions thoroughly under cold running water, shake off excess moisture and chop finely with a sharp knife. Put chopped greens with the rest of the ingredients.
