Kuban salad with cabbage, cucumbers and bell peppers for the winter

One of the most popular types of preparations for the winter is the Kuban salad. It consists of six types of seasonal vegetables, ideally in harmony with each other to taste. Kuban salad is a real source of vitamins and nutrients rolled up under the lid. Fresh vegetables are marinated in their own juice and then sterilized. This keeps the salad crisp and juicy, and retains the flavor of the freshly prepared salad.

Peel the onions, rinse and soak in cold water for 15-20 minutes. Then we chop it into thin half rings and put it in a deep enamel bowl.

We wash the cabbage under running water, let it dry a little on a kitchen towel, then finely chop it with a special knife.

We clean the carrots, wash and rub on a coarse grater. We wash the cucumbers, dry them a little on a kitchen towel, cut off the ends and cut into thin half rings.

We wash the tomatoes, dry them a little and cut them into small pieces of arbitrary shape. We wash the bell pepper, clean it from the stalks and seeds and chop it with thin straw. Mix the vegetables in a deep container, add sugar and salt, put on gloves and mix the salad well, crushing the vegetables a little so that they let the juice out. We leave the plate with vegetables for 30-40 minutes, so that they are slightly marinated in their own juice.

We wash the salad jars with baking soda, rinse well with running water and sterilize in the oven for 5-7 minutes at a temperature of 120 degrees, turning them upside down, then take them out of the oven and leave them to cool completely. Then we put a bay leaf in each jar and put the salad in the jars.

Cover the salad jars with lids and put them in a deep saucepan with a cotton napkin at the bottom. Pour water into a saucepan so that it covers the cans up to the shoulders, and put it on medium heat. Bring the water to a boil, reduce the heat and sterilize the salad for 25-30 minutes.

Tightly tighten the finished salad with sterilized lids, turn the jars upside down and leave to cool completely at room temperature. Then we put the salad for storage in a dark, cool place.
