Nezhinsky salad without sterilization

This salad in Soviet times flaunted on the shelves and was one of the favorite preparations. Cucumbers for its preparation can be used in any variety and size. A recipe without sterilization will preserve the crunch of the green vegetable and shorten the cooking time. It is better to store such a salad for no more than 6 months, but, you will see, it will be eaten with pleasure far before this period.

Wash cucumbers well and place in a bowl of cold water for 3 hours.

Rinse the cucumbers again, cut off their tails and cut into 1 cm rings.

Transfer them to a deep saucepan. Peel the onion, rinse and chop into thin half rings. Add it to cucumbers, add sugar and salt, as well as pepper. Mix everything gently and set aside for 1 hour so that the vegetables give juice.

Add oil to the cucumbers, stir and send to the stove. Boil them over medium heat and cook for 10 minutes. Add vinegar, stir and remove from heat.

Spread the hot salad in sterile dry jars, into which peppercorns and lavrushka were previously thrown and screw them on with the lids boiled earlier. Turn the cans over and wrap until completely cool.
