Classic Nezhinsky salad

When you are so pleased with the harvest of cucumbers that you do not have time to roll them up, very often the fruits overripe. This salad is just for such an occasion. Use vegetables of any size and variety for its preparation, it will not spoil the taste. And this salad also contains a lot of onions - 1/6 of the total volume, it perfectly complements the taste of cucumbers.

Wash the cucumbers and put them in a basin, pour cold water into it for 2 hours and rinse well. Cut off the ends of the vegetables and cut into circles or semicircles, depending on the size.

Peel the onion, rinse and chop into thin half rings. Place vegetables in a bowl, salt and mix the ingredients well. Set it aside for 30 minutes to let the juice stand out from the cucumbers.

Put pepper, laurel, mustard, sugar, oil and vinegar in a saucepan. Stir until the sugar grains are dissolved. Transfer the juiced cucumbers to a saucepan, stir and bring to a boil. Keep on low heat for 5 minutes, stirring occasionally.

Put the hot salad in sterile dry jars to the top and tighten the lids. Turn them over and cover with a blanket until they cool completely.
