Classic hunting salad for the winter

A light and tasty vegetable salad for the winter - easy. Made from seasonal vegetables with the addition of spices, oil and vinegar, it will serve as an ideal vegetable garnish for meat and vegetables. You can adjust the sharpness of the salad to your choice by adding more or less hot peppers, and also adjust the amount of vegetable oil so that the salad is not too greasy.

We wash the vegetables. Pepper we clean from stalks and seeds and cut into small cubes. Hot pepper - thin strips. Cut the tomatoes in half, remove the stalks and cut into small cubes.

We clean the onion, rinse it and soak it for 15-20 minutes in ice water so that it does not irritate the eyes. Then cut it in half lengthwise and again in half and chop it into thin slices.

Combine all prepared vegetables in a deep saucepan, put on medium heat and bring to a boil, then reduce heat and simmer for 15 minutes. At the beginning of cooking, while the vegetables have not started up the juice, you can add 50 ml. water.

Then add salt, sugar and spices to the vegetables, mix and simmer for another 15 minutes. 5 minutes before the end of cooking, add vinegar to the salad, mix well again and, when ready, remove the saucepan with the salad from the heat.

Put the finished hot salad on sterilized jars, close with boiled lids, turn the jars upside down and leave the salad to cool completely. Then we put the salad in a cool dark place for storage.
