Hunter's salad with tomatoes for the winter

We offer you a recipe for preparing a fresh salad, consisting of a wide variety of seasonal vegetables, seasoned with various spices, vinegar and vegetable oil. Vegetables in the salad retain vitamins and useful properties, since they do not undergo heat treatment, they are only thinly chopped, seasoned with spices and marinated for two days in a marinade. The only condition is to store the salad in the refrigerator or cold cellar.

We wash the bell pepper and put it on a kitchen towel so that it dries a little. Then we remove the stalks and seeds. Cut the pepper into thin rings.

Peel the onions, rinse, soak in cold water for 10-15 minutes. Then chop the onion into thin rings. Peel the garlic, rinse and cut into thin slices.

Peel the carrots, rinse and cut into thin rings.

Soak the tomatoes in cool water for 20-30 minutes. Then rinse and cut into thin rings.

Put the vegetables in a deep saucepan, add spices, vinegar and vegetable oil, mix well, cover the pan with a lid and leave for 1-2 days for the vegetables to let the juice and soak in the marinade. Do not forget to stir vegetables several times a day.

After the indicated time, mix the vegetables well again and put them in sterilized jars, then pour the marinade into the jars, in which the vegetables were pickled. Pour the unused marinade remaining from the vegetables. We tighten the jars with boiled lids and put the salad in the refrigerator for storage.
