We start preparing the salad by preparing the greens. Rinse the arugula under running water. Leave in a colander to drain all the water. Then tear off the long tails, leaving the arugula leaves intact.

Cut lightly salted salmon into small cubes. We send the chopped fish into a convenient container, pour with two tablespoons of soy sauce and leave to marinate while we do the rest of the preparations.
