Squid, shrimp and tomato salad

A very bright and light salad that stimulates the appetite and cheers up. Such a kaleidoscope on a plate immediately catches the eye and makes you want to try. With a fairly large volume of dishes, there are few calories in it - it's all about fresh herbs and seafood. It is also important that instead of the traditional mayonnaise, we serve a refreshing juicy dressing based on olive oil and lemon juice. It perfectly sets off every ingredient and does not weigh down the dish at all.

Wash squid thoroughly in plenty of running water. We remove the translucent film from the surface, pull out the cartilaginous plate. We dip the prepared carcasses in boiling salted water and cook for no more than two minutes. Then let the boiled squid cool and cut them into thin rings.

Rinse the shrimp and fill it with boiling water for four to five minutes. after heat treatment, drain the water, and clean the shrimp from the shell and tails.

Wash the cherry, dry it and cut it lengthwise into four parts. Of course, instead of cherry, you can use tomatoes of other varieties, but it is the small tomatoes that successfully support the composition of the salad and look especially attractive.

Wash the green lettuce leaves and dry them on a towel, after which we tear our hands into small pieces. By the way, you can use any salad mix that you like or have available as a green "pillow". To decorate the salad, place a small-diameter cup on a flat dish. Putting the herbs around the cup - this will make the dish look like a ring. On top of the greens, lay out squid and shrimp rings in a chaotic manner. Put slices of cherry tomatoes on top.

To prepare the dressing in a small container, mix the cold-pressed olive oil, soy sauce, lemon juice, chives passed through a press and chopped parsley. Shake everything together, add granulated sugar, salt and black pepper to taste, mix well again - it is important that the crystals dissolve.

Before serving, place the dressing in a beautiful bowl and place it in the center of the salad ring. We also lay olives on the surface of the dish for decoration and soft taste. It is recommended to serve such a salad immediately after preparation, until it has lost its freshness.
