Squid, tomato and pepper salad

In this squid salad, the crisp texture of fresh vegetables comes to the fore and sets the mood. It lacks the weight and density that are typical for mayonnaise salads. Crispy bell peppers and juicy tomatoes, as well as spicy onions marinated in lemon juice, turns out to be excellent "companions" for squid. Against their background, the delicate flesh of seafood is especially noticeable and fully reveals its characteristic taste.

Defrost squid, if necessary. We wash them in plenty of running water. Using a knife, remove the surface film and pull out the cartilaginous long plate. We place the prepared peeled carcasses in a bowl and pour boiling water over it. After four to five minutes, drain the water, and let the finished squid cool to a comfortable temperature.

Cut the seafood into thin rings or strips, as you like.

Peel the onions, rinse and cut into thin translucent rings, place them in a bowl. Pour lemon juice on the onion, sprinkle with a pinch of salt and granulated sugar. Stir everything together and leave for seven to ten minutes to marinate.

While the onions are pickled, wash the tomatoes, dry them and cut into small cubes. It is best to use meaty tomato varieties to give the salad more texture and less liquid. In addition, fleshy tomatoes tend to have a sweeter flavor.

We wash the bell peppers, free them from seeds and cut out the stalk. Cut the pulp into thin strips, commensurate with squid strips, or half rings.

Now we collect the salad from the prepared ingredients. Put squid strips, tomato cubes, bell pepper strips and onions slightly squeezed from the marinade into a bowl. We fill the components with mayonnaise, season with additional salt and black pepper to taste. Gently mix everything together. It is recommended to serve the salad immediately after preparation.
