Salad with squid, cheese and mushrooms

Combine squid and fried mushrooms in a salad for a delicious snack. It looks non-photogenic, but it will appeal to all lovers of seafood dishes. Mushrooms fried with walnuts and good hard cheese will add a zest to the salad.

Scald the squid with boiling water, remove the skin and internal cartilage and rinse the carcasses well under running water.

Boil water in a small saucepan and add a little salt. Place the washed squid in boiling water for 10 seconds and remove from the water. Then bring this water to a boil and place the squid in it a second time also for 10 seconds. Then transfer the carcasses to a plate and cool.

Peel the mushrooms, rinse well, cut into halves and then chop into thin slices.

Peel the onion and chop it finely. Fry the mushrooms and onions in heated vegetable oil until tender. Cook for 10 minutes. At the end of frying, add chopped walnuts to the mushrooms, mix everything and turn off the heat.

Cut the chilled squid into thin rings and transfer them to a salad bowl.

Transfer the mushrooms fried with nuts to the squid.

Then grate a piece of Parmesan directly into a salad bowl. Sprinkle the salad to your liking with salt and black pepper, add mayonnaise and mix everything gently.
