Salad with squid, egg and pickled cucumber

Easy to prepare salad with few ingredients. An interesting point is the use of pickled cucumbers. Unlike salty ones, they have a slight sour-spicy flavor, which remains noticeable in the finished salad. Chopped onions accentuate this flavor. For the squid to be tender, it is important to prepare them correctly. We wash the squid thoroughly in running water. To make it easier to clean them, we do the following: put the carcasses in a bowl and pour boiling water over them. We soak the squid for three to four minutes. During this time, the carcasses will not only actually be cooked, but the surface mucus will curl up - all that remains is to rinse it off with water to remove it. We also remove the film if desired - it is easy to pry it off the edge.

We cut the prepared carcasses first into rings with a width of five to seven millimeters, and then into rhombuses, making an oblique cross section along the rings.

Peel, wash and dry onions. We cut it into as small pieces as possible. To remove the bitterness and soften the harshness of the onion, place it in a bowl and pour boiling water over it. After three to four minutes, drain the water, and lightly squeeze the onion mass with your hands from moisture.

Boil the eggs beforehand and cool completely. We clean and chop finely. Alternatively, you can rub them on a coarse grater.

For pickled cucumbers, cut off the ends on both sides. We cut them lengthwise into two parts and let the marinade drain from the inside so as not to add excess moisture to the salad. Then we cut the halves of the cucumbers into small pieces of any shape.

In a bowl, mix the ingredients for the salad: squid diamonds, chopped onions, eggs and pickled cucumbers. Sprinkle the mixture with black pepper and salt to taste. Add mayonnaise and mix gently.

Serve the prepared salad in a common salad bowl or on portioned plates. It is advisable to serve it immediately after preparation.
