We wash the squid thoroughly in running water. To make it easier to clean them, we do the following: put the carcasses in a bowl and pour boiling water over them. We soak the squid for three to four minutes. During this time, the carcasses will not only actually be cooked, but the surface mucus will curl up - all that remains is to rinse it off with water to remove it. We also remove the film if desired - it is easy to pry it off the edge.
