Salad with squid, egg and green onions

If you have squid at home, but you don’t want to bother with preparing complex multicomponent dishes from it, you can make a simple salad. Despite all its simplicity and elementality, it has a rather rich taste. Natural squid is already delicious in itself, and if you add eggs, green onions and mayonnaise, then additional notes appear that only enhance its sound like seafood. In order to preserve the natural texture of the squid as much as possible, we recommend preparing it using the boiling water method. Squids must be completely defrosted before processing and cooking. Then we rinse in running water.

We place the carcasses in a deep bowl and pour boiling water over it. Superficial mucus and film will begin to curl up and separate from the pulp. Drain the hot water, and peel the squid by prying the transparent skin with a knife. We pull out the central cartilage.

Rinse the peeled carcasses again and again pour boiling water into a bowl. We withstand them for three to four minutes, then drain the water. The squids are ready, all that remains is to let them cool down before slicing.

Boil eggs until firm yolk - ten to eleven minutes of cooking will be enough. Fill them with cold water and cool completely, then clean them.

Finely chop the boiled eggs with a knife or grate them with large holes. Pour them into a salad bowl.

The cooled squid is first cut into rings, and then we make cross-sections obliquely - rhombuses are obtained.

Rinse the green onions and dry them on a towel so as not to add excess moisture to the salad. Cut the feathers into small transverse pieces.

Add chopped squid and chopped green onions to the salad bowl to the eggs. Sprinkle with a little salt and black pepper. We mix all the ingredients.

You can serve salad both in a common salad bowl and in portions, putting a spoonful of mayonnaise on top. It is better to mix the sauce with the salad just before use, since green onions can give off an unpleasant odor after spending some time with mayonnaise.
