We offer a recipe for making a low-calorie salad with squid without adding mayonnaise. Moreover, such a dish can be served both without sauce at all, and with a PP-alternative to fatty mayonnaise. We prepare a fragrant dressing from healthy natural yogurt, seasoning it with fragrant black pepper and fresh chopped herbs. You can serve yoghurt sauce separately in a bowl, so that everyone can add the required amount to their portions, or even do without dressing.
Ingredients
Cooking process
We wash the squids thoroughly in a large amount of water. We clean the upper skin with a knife, pull out the cartilaginous rod. We place the processed carcasses in a bowl and pour boiling water over them so that they are completely covered with it. We steam the squid for three to four minutes, after which we drain the liquid, and pour over the carcasses with cold water and cut into thin strips.
To prepare the sauce, place the cold plain yoghurt in a bowl. We wash and dry green onions and dill - no extra moisture is needed. Chop the onion feathers as finely as possible, chop the dill with a knife in the same way. Pour the prepared herbs to the yogurt, add salt and black pepper to taste. Mix thoroughly and pour the sauce into a serving bowl, which we keep in the refrigerator until serving.
We wash and dry the green lettuce leaves with a towel. We lay them out on portioned plates, closing the bottom. We put pieces of cucumber interspersed with strips of squid. Place the egg slices on top. Lightly sprinkle the surface with salt. Serve the salad to the table immediately after cooking, along with cold yoghurt sauce.
Bon Appetit!
