Salad with squid, egg, cheese and onion

A very delicate salad with a rich taste. An interesting point: we suggest frying onions before adding to the dish - this will provide a fragrant "mushroom" note that goes well with squid and cheese and emphasizes their natural taste. Eggs support the overall flavor and add richness and tenderness. The ideal dressing option for such components would be mayonnaise. The finished salad turns out to be hearty and quite dense for the stomach. But it's delicious!

Peel the onions, rinse and dry. We cut it into thin transparent half rings. Heat a small amount of vegetable oil in a frying pan and spread the onion. With occasional stirring, fry it until it is completely soft and begins to brown noticeably. Remove the pan from the stove, and remove the onion into a plate to cool.

We wash the squids, clean and boil for a couple of minutes in salted water. We cool the carcasses and chop them into thin strips.

Grate hard cheese with large holes.

Boil the eggs hard-boiled, cool completely and peel them. We grate them similarly to cheese.

Put the cooled fried onions, squid strips and grated eggs with cheese in a salad bowl of a suitable size. Add mayonnaise and mix all the ingredients. We taste and, if necessary, add salt to the salad, and also add black ground pepper.

The finished salad can be left to stand in the refrigerator for a couple of hours - it will infuse and become even richer. Just before serving, decorate the surface of the dish with fresh parsley.
