Salad with squid, egg, cheese and tomato

A salad for those who do not like heavy mayonnaise mixtures and prefer light dishes with juicy dressing. The base of this salad is fresh herbs. Already against her background, the squid solo in the company with tomatoes and eggs. As for the latter, we suggest using small cherry and quail eggs. Their size allows you to "draw" the perfect picture of the dish. Well, in general, cherry is still sweeter and juicier than many varieties of large tomatoes. We finish off the bright composition of the salad with grated parmesan. Moreover, we recommend sprinkling the dish with cheese last, just before serving - this will preserve its crumbly texture and characteristic aroma.

Defrost squid, if necessary. Rinse them thoroughly in water and remove the top film. We place the prepared carcasses in a bowl and fill them with boiling water. We steam the squid for three to four minutes, after which we take them out, let them cool and cut into thin rings.

Place the cut rings in a bowl of suitable size.

We wash the green lettuce leaves and dry them without fail - no extra water is needed in the lettuce. We tear the leaves with our hands into small pieces and place them in a salad bowl.

We open the jar of olives and put them in a colander. After the brine has drained, pour the olives on top of the green salad.

We wash, dry and cut the green onions across the feathers, making a cut obliquely - you get small pieces that resemble thin rhombuses. Add the onion to the salad bowl.

Pour soy sauce over the ingredients.

After the sauce, add extra virgin olive oil, salt and black pepper to taste to the salad. We mix all the components with each other.

Wash the cherry tomatoes, dry and cut into halves.

Pre-boil quail eggs hard-boiled and refrigerate. We clean them and also cut them into halves.

We lay out halves of cherry and quail eggs on the surface of the salad in no particular order. Sprinkle with a little black pepper and salt. Just before serving, sprinkle the grated Parmesan on top and serve.
