I want to share, in my opinion, a recipe for a salad with shrimps, arugula and cheese for meeting unexpected guests. The recipe is very quick and simple. The salad turns out to be extremely tasty with an incredible combination of flavors.

Soak a bunch of arugula in ice water for 10-15 minutes to keep the salad crispy. Remove the arugula from the water and shake off excess moisture, put on a paper towel.

Wash the cherry tomatoes thoroughly under cool running water, then pat dry with a kitchen towel or paper towel. Peel the shrimp from the shell and intestines. Cut the feta cheese into a medium dice.
