Shrimp salad with arugula, cherry tomatoes and cheese

It is with great pleasure that I want to share my favorite recipe for an incredibly tasty and easy-to-prepare salad. Salad with shrimp, arugula, cherry tomatoes and cheese can be served for a festive celebration or pampered at home on a regular day.

First of all, peel the shrimp from the shell and intestinal veins, and then rinse thoroughly under cool running water, then put on paper towels and pat dry.

Rinse the chili peppers well under running water, then cut them lengthwise and remove the seeds from the core. Peel the garlic and rinse in cool water.

Heat the skillet well over moderate heat. Pour in a small amount of olive oil. Add the peeled chili and garlic, sauté for a few minutes to give the oil a pleasant smell, and then gently remove from the pan.

Put peeled shrimps in a frying pan and fry until golden brown for just a couple of minutes on each side.

Wash the cherry tomatoes thoroughly in cool running water, pat dry on a kitchen towel or paper towels, then cut in half.

Wash the arugula thoroughly under cool running water, and then shake off excess moisture and leave in a sieve for a few minutes.

Place prepared arugula on a serving dish or serving plate. Spread the cherry tomatoes evenly over the arugula.

Remove the cooked shrimps from heat and cool slightly.

Then put them on top of the salad, pour the oil in which the shrimps were fried, salt a little and add black pepper to taste. Grate the parmesan on a coarse grater and sprinkle the salad on top. Serve the prepared salad with shrimps, arugula, cherry tomatoes and cheese.
