A very satisfying and delicious salad of liver, carrots and onions, it has an unusual taste and incredible satiety. Such a salad may well replace the main dish on any table and become not only a festive dish, but also an excellent lunch.

Boil high quality beef liver in advance and let cool. While the liver is cooling, do other preparations.

Peel and rinse the onions under running water, then cut them into small cubes or half rings with a knife to taste.
