As a rule, salads with rice for the winter are all cooked with the addition of bell pepper, which is not surprising, because it turns out guaranteedly delicious. But we propose to cook a vegetable salad from zucchini, onions and carrots based on rice. It turns out simply and tastefully, especially since it does not require an additional purchase of pepper.

Rinse the rice, pour 5 glasses of water and cook until half cooked. Then put in a colander, rinse with water.

Wash the courgettes, peel and cut into cubes. Dice the onion, chop the garlic with a knife, grate the carrots on a coarse grater.

Fry the carrots and onions in a frying pan on a vegetable place for 5 minutes.

Add zucchini, tomato paste, salt, granulated sugar and ground pepper. Stir, cover the pan with a lid and simmer for 30 minutes. In 5 min. before cooking, put rice and minced garlic in the salad.

Arrange the hot salad in sterilized jars, roll up with boiled lids and turn upside down. Cover the seams with a blanket and let cool for 18 hours. Store before use.
