Rice salad for the winter with tomato paste

I suggest making a delicious salad with rice and tomato paste for the winter. An easy-to-prepare salad turns out to be unusual in taste. If you have prepared zucchini for the winter according to various recipes, and do not know what else to cook, then this recipe will be an excellent option.

Prepare all the ingredients for the rice and tomato paste salad.

Wash the squash thoroughly, pat dry with paper towels and peel with a vegetable peeler. Using a tablespoon, remove the seed core. You do not need to peel young zucchini. Cut the peeled zucchini into slices and then into 4 pieces. The cutting method is not critical.

Peel the onions and rinse under running water, cut into medium cubes.

Rinse the rice thoroughly several times. Put the prepared ingredients in a metal dish with a thick bottom.

Dissolve the tomato paste in the required amount of drinking water, add the required amount of vegetable oil and granulated sugar. Mix thoroughly and pour into a container.

Then add the required amount of table salt. Place the container with the contents over medium heat and bring to a boil. Then reduce heat, cover and cook for about 25 minutes, stirring occasionally.

Prepare the jars, wash them thoroughly and sterilize them in the oven, microwave, or water bath. Pour boiling water over the lids or simmer in a saucepan for about 10 minutes. Peel the garlic, rinse and pass through a press into the salad and pour in the vinegar. Stir well and remove from heat.

Gently spread the hot salad in sterile jars using a ladle.

Screw on with sterile caps. Turn the salad jars upside down and wrap them in a warm blanket. Leave in this position until it cools completely for about a day. Then, turn the cooled snack jars over and transfer to a cool, dark place for long-term storage.
