We wash the tomatoes under running water, put them on a kitchen towel and leave them to dry out a little. Then cut the tomatoes in half, remove the stalk and grind them in a blender. Put the tomato puree in a deep saucepan, put on medium heat and bring to a boil. Then add salt and sugar to the tomatoes, mix well and cook the puree over low heat for 8-10 minutes.

We clean the carrots, wash and rub on a coarse grater.

Peel the onions, rinse and soak for 10-15 minutes in cold water so that it does not irritate the eyes when slicing. Then chop the onion into thin rings, and if the onion is large, into half rings.

We wash the bell pepper, put it on a kitchen towel and leave it for 10-15 minutes to dry out a little. Then we cut the pepper in half, remove the stem and seeds. Cut the pepper into cubes or thin shavings. We clean the hot pepper, remove the seeds and the stalk, cut into small cubes.

Add chopped vegetables to the tomato puree in a saucepan, mix and bring to a boil.

Pour the rice into a deep container, scald with boiling water, drain it and add to the pan to the vegetables, then pour in the vegetable oil. Mix all the ingredients and leave to simmer for 8-10 minutes. Then add vinegar to the pan, stir, simmer for another 5-7 minutes and remove the salad from heat.

We lay out the finished salad in sterilized jars, tighten them tightly with boiled lids, turn the jars upside down and leave to cool completely at room temperature. Then we put the jars of salad in a cool dark place for storage.
