Boiled tongue salad

Tongue is a dietary product from which delicious dishes are prepared. Both beef and pork tongue are eaten. Both products are very tender, the only difference is in the time of their preparation. I propose to prepare an interesting bright salad with boiled tongue.

Rinse the pork tongue well under running water. Pour water into a deep saucepan, boil, gently put the tongue in boiling water, salt. Remove the resulting foam, reduce heat and simmer for about an hour and a half. Wash the eggplant well, peel, cut into strips, salt and leave for 10 minutes.

Wash carrots and bell peppers well. Peel the carrots, peel the bell peppers from the core and seeds. Cut vegetables into strips. Peel the onion and cut into thin half rings.

Heat the pan well, add a small amount of vegetable oil. Lay out the chopped carrots, fry for a few minutes.

Add onions. Drain the resulting liquid from the eggplant, squeeze out a little, put in a pan with bell pepper. Fry the vegetables, stirring occasionally.

Transfer the finished tongue to ice water for a few minutes, and then peel it. Cut into strips and place with sautéed vegetables. Peel the garlic, squeeze it into a skillet with a press, pour in the soy sauce. Season to taste. Mix thoroughly.
