Tongue and mushroom salad

This delicious and delicate salad is a culinary delicacy. After all, just boiled beef tongue is an exquisite dish, and it is usually served as jellied or sliced. A salad made from it, and even with Sulguni cheese, eggs and herbs, will be a wonderful dish on your festive table. Mushrooms fried with onions will add a special piquancy to it.

First, wash your tongue well with warm water and cook it until tender in salted water. The boiling time of the tongue is on average 2–2.5 hours. Check the readiness by piercing it with a fork, the meat should be soft.

Cool the boiled tongue under running cold water and peel it.

Cut the prepared boiled tongue into thin strips and transfer to a separate plate to cool completely.

In a separate saucepan, boil the hard-boiled chicken eggs and cool them in cold water. Then peel the eggs.

Use a knife to cut the eggs into small cubes and transfer to a separate plate.

Peel the onion and chop into thin half rings. Transfer it to a separate plate as well.

Peel fresh mushrooms, rinse with running water and chop into thin plates.

Heat some vegetable oil in a skillet and fry the mushrooms and chopped onions in it. Fry until tender and golden brown. Remember to stir while frying.

Transfer all the chopped foods to a large bowl and add mayonnaise sauce and black pepper to your liking. Stir the salad with a spoon.
