Today we will be preparing a delicious and satisfying mackerel salad with vegetables. A stunning combination of tomatoes, bell peppers, onions and carrots with tender and so healthy mackerel is a real find! It will take a lot of time to prepare such a blank, but the result will surprise you with its delicious taste and practicality in use.

We wash the tomatoes under running water, put them in a saucepan and scald them with boiling water. Then drain the boiling water and pour in cold water, leave the tomatoes for 2-3 minutes, then peel them. Cut the tomatoes in half, remove the stalks and grind them in a blender. Peel the onions, rinse and soak in cold water for 15-20 minutes. Then chop the onion into thin half rings. Peel the carrots, rinse and grate for carrots in Korean.

We wash the mackerel under running water, cut off the head and tail, then steam the abdomen and clean the giblets from the fish.

We cut the fish along the back and separate the fillet from the bone. Then we cut the fillet into small pieces 3-4 cm wide.

Put the prepared vegetables in a saucepan, add salt and sugar, vegetable oil, mix all the ingredients well and put on fire. Bring to a boil, reduce heat and simmer vegetables for 70-80 minutes. After the time has elapsed, add fish, bay leaf and pepper to the vegetables, mix and simmer the salad for 35-40 minutes, not forgetting to stir it periodically. Five minutes before the end of cooking, add vinegar to the salad, mix and, when ready, remove the salad from heat.

Distribute the finished hot salad over sterilized jars, tighten with boiled lids, turn the jars upside down and leave at room temperature until they cool completely. Then we remove the salad for storage in the refrigerator or cellar.
