Quince, although astringent and tart when raw, is an ideal fruit for making jam. It is made from crushed fruit and boiled until it becomes jelly. Grind the quince in a meat grinder, which will make the consistency of the jam a little different than when chopping with a blender. Cook the jam three times, with interruptions for cooling, so that the jam becomes a beautiful pink color. This jam will be a good filling for homemade baked goods and just an addition to tea.

Cook the jam over low heat for 30 minutes, then add sugar to it in the amount indicated in the recipe, mix everything and boil for another 20 minutes with sugar. When cooking, stir the jam periodically with a wooden spoon, as it can burn. After this time, turn off the heat, and leave the jam under a covered lid for 4-5 hours to cool. Repeat this cooking process 2 more times and also with a break for cooling.

After the third cooking, pack the hot jam in dry sterile jars and seal hermetically with boiled lids. Then put the jars on the lids, cool under a warm blanket and then transfer to a storage location.
