Champignons cooked over a fire on a wire rack have an extraordinary aroma and smoky taste. These mushrooms are perfect as a hot dish at any picnic, although cold mushrooms will not lose their taste.

Make a fire and let the coals burn. In the meantime, rinse the young mushrooms thoroughly under running water and pat dry with paper towels. Peel. Cut large mushrooms in half.

Prepare the marinade. Put the mayonnaise in a deep container, add lemon juice, table salt, dried thyme and Provencal herbs. Stir until smooth. If you don't eat mayonnaise, replace it with natural yogurt or sour cream. This will not spoil the dish at all, but, on the contrary, will give an incredible delicate taste.

Put the prepared mushrooms in a container with the prepared marinade and mix well with your hands. Tighten with cling film and refrigerate for about 30-60 minutes.
