When you want something different and you have cherries in the fridge, why not use them for a delicious flavorful cake? Cherries can be used both fresh and frozen.

Set the oven to preheat at 180 degrees. If you are using fresh cherries, wash them well, separate the tails, and remove the pits. This can be done with a special device or a pin. Place the peeled cherries in a sieve to drain the excess juice, if the cherries are frozen, defrost them directly in the sieve, the excess juice will drain.

Whisk the cooled eggs together with granulated sugar for a few minutes. You do not need to use a mixer.
